Back on topic for the moment, abstinence might be the only 100% safe option, but it's rather impractical and unenjoyable for the vast majority of people.

When it comes to disease, I would rather be paranoid than complacent.

Mikey, the reason those diseases didn't kill us all is because they were acted upon quickly and contained while effective medication was researched and produced. Maybe less in the case of swine flu (which was kind of a joke, even I'll agree to that) but SARS was scary due to it's high contagiousness (it was more contagious than TB...THAT is scary) and bird flu was scary because birds migrate all around the world and could easily have taken it with them. As much as nothing came out of these diseases, what causes the scare is the fact that when they appeared on the scene we were not ready to handle them.

And then suddenly, because they were contained and vaccines/medications were produced, we were. That's why the scares seem ridiculous in hindsight, but the idea of another black death, or, hell, why not, another Polio is terrifying, to say the least.

Another important thing to keep in mind is that viruses mutate extremely quickly, especially if they are highly contagious. This was the real worry about swine flu; that it would spread quickly, mutate into something truly dreadful, and suddenly a huge chunk of the population drops dead. That was a "worst case scenario" thing, but it underscores just how important it is to take warnings from the CDC very seriously.
